Steps

The way to make this dipping sauce is quite simple, you just need to follow these steps


Step 1: Mix the amount of water and sugar together (if using warm water, the sugar will dissolve faster) with lemon or vinegar: with the following ratio 3-5-7 water: 1.5 sugar: 1 sour (when you taste it, the sweetness and sourness should be like your favorite lemonade). The ratio 3-5-7 of water means it depends on the type of dipping sauce you plan to use, the less water the more rich flavor it be


Step 2: Add vegan fish sauce (You may want to check out my vegan fish sauce recipe here). Add vegan fish sauce gradually according to the saltiness and dark or light color you want (because it is vegan fish sauce, each recipe and method has a different ratio of saltiness) so I do not give a standard ratio. Add vegan fish sauce, until the dipping sauce mixture reaches the golden brown or color you like. However, if the fish sauce you use not salty enough, add little salt and a little mushroom kelp seasoning (optional), until it reach to your preference. (If you don't use vegan fish sauce, you can substitute it quickly by adding soy sauce to the dipping sauce mixture until it turns to a nice golden brown)


Step 3: Add the chopped vegetables into the dipping sauce bowl. There is no need to pickle the vegetable, you just thinly slice them and add to it. They will still be crunchy, absorbing enough flavors. Mince 1 red chili and 3 garlic cloves, then add to the dipping sauce for spiciness and aroma.
