Ingredients
25g kelp
50g dried shiitake mushroom
2 pieces pineapple
1-2 bulb black garlic
4 cloves garlic
1/2 bulb shallot
2 tbsp salt
1.5 tbsp dark soy sauce
1 tsp mushroom seasoning
1 cup water

Prepare
Kelp, mushrooms washed with water to clear any impurities
Peeled black garlic, white garlic, and shallot skin
Cooking
Put all the ingredients in the pot. Bring to a boil over high heat. When it comes to a boil, lower the heat and simmer for 45 minutes to 1 hour for the flavors to blend and combine. After 1 hour simmering, turn off the heat and add 1 tbsp of mushroom seasoning. Wait until sauce to cool completely, then pour it into a jar and store it in the refrigerator for later use.
Note
The sweet aroma from mushrooms and black garlic, the sea taste from kelp, onions and garlic helps to enhace overall flavor
If you don't have dark soy sauce, you can replace it with 4-5 tbsp regular soy sauce
The original fish sauce has a very salty taste. So for vegan recipe, you may be don't be bother to add more salt.
