Ingredients
13.5 oz white button mushrooms
2 tbsp cooking oil
1 onion
3 cloves garlic
1 thumb ginger
4.5 oz white beans
7 oz tomato sauce
1/4 cup almond (or other nut) milk
salt to taste
1) Spices for marinating mushrooms
1/2 cup unsweetened Greek yogurt
1/2 tbsp minced ginger
2 tbsp minced garlic
1 tbsp garam masala powder
1 tsp chili powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
2) Spices for cooking
2 tbsp garam masala powder
2 tsp cumin powder
1 tsp turmeric powder
1 tsp chili powder
1/2 tsp coriander powder
1/2 tsp sugar
Steps
Preparing
Finely chop onion, mince garlic and ginger.
Clean mushrooms, cut into bite-sized pieces (by a knife or by hand). Mix well with spices (1) and let marinate for 15 minutes.
Mash white beans.
Cooking
Heat 2 tbsp cooking oil on medium heat, add the marinated mushrooms to fry for about 5 minutes. Then add the chopped onion, 3 cloves minced garlic and 1 thumb minced ginger and stir well.
Add all the spices (2), together with tomato sauce, 1 tbsp of chili powder, mashed white beans, and almond/nut milk.
Mix well and bring to a boil. When boiling, reduce heat to low, simmer for about 20 minutes until mushrooms are soft. Add salt, season to taste.
Ladle into a bowl. The dish is usually served with rice or naan (Indian bread), extremely delicious.
