Dan Dan noodles

Ingredients

  • Sichuan pepper

  • 2 green onions

  • half thumb ginger

  • 3 cloves of garlic

  • 1 tbsp cooking oil

  • 5.3 oz plant-based meat

  • 1.5 oz Sichuan preserved mustard green

  • chili oil

  • dan dan noodles (suggested 7 oz for 2 bowls)


Sauce

  • 3 tbsp soy sauce

  • 1 tsp sugar

  • 1 tbsp sesame paste

  • 1/4 tsp Sichuan pepper

  • 1 tbsp chili oil

Steps

Preparing

  1. Roast and mince Sichuan pepper.

  2. Finely chop green onion, keeping the green and white parts separated.

  3. Mince the ginger, garlic and onion white.

  4. Thoroughly mix all the ingredients for the sauce.

  5. Cook the noodles according to the instructions on the package.


Cooking

  1. Heat 1 tbsp cooking oil over medium heat, saute garlic, ginger and onion white until fragrant.

  2. Add the plant-based meat and cook until dry and break up (if you use other ingredients, also stir until dry and spread). Once cooked, add the preserved mustard greens and sauté for 1-2 minutes with 1 tbsp of chili oil.

  3. Stir well, make sure that the protein part is a bit lighter for your usual taste (because we still have sauce, so we don't need to season it with salt).

  4. Prepare 2 shallow bowls, pour 1.5 tbsp of the mixed sauce evenly on the bottom of the bowl. Spread the noodles evenly over the sauce (according to the serving size), put the fried protein on top, drizzle 1-2 tbsp chili oil evenly over the protein and noodles, sprinkle some thinly sliced green onions.

  5. That's it, the dish is finished. Before eating, remember to mix the ingredients in the bowl well with the sauce at the bottom.


*Notes

  • A Sichuan dish cannot lack Sichuan pepper, with the signature spicy and sour taste.

  • The sauce is the soul of this dish, and the characteristic aroma of the sauce is created mainly from the pepper and chili oil.

  • You can replace plant-based meat with mashed tofu (put it in a towel to squeeze out the water), you can also add a little minced mushrooms to help promote the sweetness of the protein when stir-frying.

  • The preserved mustard greens are quite salty, so put just enough. For more vegetables, you can blanch or add other vegetables to stir-fry such as bok choy, Chinese broccoli, napa cabbage, or broccoli. The original version doesn't include green vegetables, just follow your choice and taste.

  • Dan Dan noodles are small, but not too small like egg noodles. They are as big or a little larger than Korean instant noodles. If you don't have Dan Dan noodles, you can also choose Korean somen at Asian supermarkets. In Vietnam, you can choose fresh Korean or Japanese ramen, or even Korean instant noodles. I recommend noodles that have the same size as Dan Dan. If you try other noodles, let me know!
